Danish Dietary Advice

  • Assemble rye bread, herring, raw onion and aquavit.
  • Top the bread with a slice of onion and a bit of herring.
  • Take a bite, then sip a bit of the firewater.
  • Chew.
  • Yum.
Product placement note: there's a lot of inedible herring in the world. The stuff we sampled came out of a jar labeled "Skippersild Marinrede Sild," and it was super--mild but tangy, and not fishy. The swill was "Aalborg Taffel Akavit." The onions were fresh picked in the back garden.
